Refreshing Fruit & Cream Cake

I found this recipe on the internet & I have slightly changed it. This is the most amazing, easy to make and refreshing cake!

To make it you will need:

For Sponge-cake:

  • 3 eggs;
  • 180 g self-raising flour;
  • 110 g sugar;

For Filling:

  • 3 oranges;
  • 3 clementines;
  • 1 banana;
  • 150 g canned pineapple.

For Cream:

  • 900 g greek yoghurt;
  • 250 ml (1 glass) of sugar;
  • 1 spoon of vanilla sugar;
  • 50g gelatine;
  • 180 ml water.

Let’s bake a sponge-cake first. Mix eggs and sugar together, add sifted flour, mix everything well and pour the batter into the baking tray. Heat your oven in 180° temperature, and bake the sponge-cake for 20 minutes. Take it out, let it to get cold and slice in small 2×2 cm cubes.

Mix gelatine with water and let it reach a thick consistency. We need it to melt, so I have put a glass with gelatine in a bowl with hot water, so in this way it has melted.

Whip yoghurt together with sugar until it melts. Add gelatine and mix well again.

Peel oranges and clementines off, and slice them like in the picture below. Slice banana and pineapple in small cubes.


Take a round baking tray (I used 23 cm) with removable side. Cover the bottom with oranges, layer with sliced sponge-cake and fruits and pour half of the cream on top. Then repeat the same steps again – sponge cake, fruits and cream on top. I didn’t want the cake to look boring, so I have sprinkled it with little marshmallows.


Looking good! Cover the cake with cooking film and leave in the fridge overnight. Next day you can enjoy this refreshing, tasty cake! 🙂
